Gorgonzola Chicken

RENZO'S GORGONZOLA CHICKEN
Renzo Sciortino
Renzo's Restaurant, Boca Raton, Florida
Serves 2

4 pieces of chicken breast pounded thin
flour to dust
2 T butter
4 ounces mushrooms, sliced
pinch salt
pinch black pepper
pinch parsley
6 ounces heavy cream
6ounces Gorgonzola chunks

Dust chicken in flour.
Melt butter in sauté pan on high heat.
Sauté breasts about 2 minutes until they start to turn golden on both sides.
Add mushrooms, salt, pepper, parsley.
Add cream and Gorgonzola, and allow to melt and serve.

  1. I wanted to try to make the Pesto appetizer. But at Smith's I could only find parsley, no basil... Either I am blind or you need to get it somewhere special. It seems not long ago I tried to get it at Wal-mart too, and didn;t see a fresh bunch of basil their either.
    Help me!!

  2. The fresh basil is in the herb section left of the bagged salads. Usually Smith's carries larger clam-shell containers of basil. FYI, they are just above the mushrooms. If you can't find, please let me know and I can easily get some for you.
